veg eats at the ballpark

With the baseball season coming to a close in Colorado, Pop and I finally made the time to enjoy a Rockies game together this past weekend. The seats were great, and the company was even better- too bad the Rockies couldn't pull it together for a win against the Giants. *Sad trombone*
When going out to eat somewhere as meat-centric as a baseball stadium, it's always a challenge to find something vegetarian or vegan. When you think about a sports area, don't you always think of hot dogs, burgers, and nachos? I certainly do. Surprisingly enough, Coors Field has some meat-free options- yayy! In fact, Coors Field was named one of PETA's Top 10 Most Vegetarian-Friendly Ballparks in the country!

I personally think the selection of meat-free foods has decreased since last year, but hey, as long as I can find something tasty to accompany my beer, I'm happy. This weekend, Dad and I found Garden burgers and veggie dogs over at section 134. Not the best I've had, but definitely not the worst. In these situations, the key is loading it up with anything you can get your hands on- ketchup, mustard, onions, relish, sauerkraut, veggies, you name it! Drink 2 more big beers, and I promise it will taste pretty damn good :)
According to the Rockies website, you can also find veggie paninis, pizzas, burritos, and wraps around the ballpark. Whether these options will be well-crafted vegetarian fare is another thing, but hey, I'm not too picky. I just like the fact that in such a testosterone-pumping-beer-guzzling-sports-watching-area, that there are meat free options at all. Big kudos to you Coors Field. Go Rocks! :)

wrap week

I try to pack my lunch as often as possible, both to save money and calories, and sometimes I feel like I'm just eating the same old stuff day in and day out. Last week, I thought I'd give myself a fun theme, and pack my lunch everyday accordingly. Thus, last week became wrap week! Each lunch had to include a whole what tortilla stuffed with something new and delicious, and it was a total success.
Monday: Whole wheat tortilla with spicy brown mustard, cucumbers, spinach & avocado
Tuesday: Whole wheat tortilla with broccoli slaw & a Boca spicy chik'n patty
Wednesday: Whole wheat tortilla with BBQ tempeh & BBQ onions and bell peppers
Thursday: Whole wheat tortilla with kale, rice, tomatoes, feta cheese & black beans
Friday: Whole wheat tortilla with pesto, spinach, tomatoes and zucchini slices

Look at that! 5 fabulous wraps over a course of 5 days. By creatively mixing my leftovers with the staples in my fridge, I managed to make a handful of really different, and delicious meals on a small budget- what a great challenge! Also, all the fillings were super tasty, and would be equally great stuffed in a bagel, pita, or sandwich of some kind. I must say, it was an excellent wrap week, indeed :)

a quick fix picnic

For those of you who survived the Colorado monsoon of 2011, congrats! This last week primarily consisted of working, gymming, and trying to stay dry through the daily, torrential downpour. Luckily, Colorado weather is as sporadic as it is fabulous, and there was still plenty of sunshine to go around- there was just enough blue sky to fit in some kayaking today, and a lovely picnic yesterday.

Since finding a little dry weather was rare, the picnic was planned, prepared, and devoured quickly. Regardless of the time crunch, the food was fantastic, and the company was even better.

Here is the menu for some speedy picnic prep in under 30 minutes or less:
Appetizer: Raw vegetables and pita chips with hummus
Main: Pesto bowties with cherry tomatoes and feta
Side: Watermelon slices
Dessert: Strawberries and whipped cream over angel food cake
Everything was very semi-homemade, but I'm most proud of the pesto bowtie dish. It was inspired by one my friend's mom who made it for a party, and it was to die for! The flavors are outstanding, it looks elegant, and if you use all pre-prepared ingredients, it comes together crazy fast.

Stuff you need: 1. Bow-tie pasta 2. Pesto- homemade or store bought 3. Cherry tomatoes 4. Feta cheese

While the bowtie pasta is boiling, chop up all the veggies and fruits for the rest of the meal- carrots, celery and red bell pepper for hummus dipping, little cherry tomatoes for the pasta, watermelon for the side, and strawberries for dessert.

When the pasta is al dente, drain it, rinse it, and then toss it with the pesto, tomatoes, and feta in a large bowl. Pop the dish into the fridge and let all the flavors mix up to one hour. Once you have everything else prepped, packed, and ready to go, grab your pasta, your picnic blanket, and head to the park!
It would taste even better with homemade pesto, but I was in a time crunch, and this worked out perfectly. For a vegan version, all you'd have to do, is use a pesto without parmesan, and substitute dairy feta, for tofu feta crumbles.

It was brief, but delicious. Just as we were digging into some strawberries and angel food cake, the storm rolled in, and we all scarfed down our desserts. It was quickly made, and quickly consumed, but the memories will last much longer- no? Too cheesy? Yeah, I know. Anyway. Great pasta! Great picnic! :)

hot dogs, cocktails & dessert in a cup

I love summer weekends. The weather is beautiful, and there's so much to do! The last few days I found myself pouring beers at a bluegrass festival, grabbing meals with friends, seeing a few movies, enjoying jazz in the park, and continuing my search for an edible and delicious vegetarian hot dog.

Today my hangover brought me to Biker Jim's where I ordered up a basket of fries and one "Vegans gotta eat too" dog. I slathered it with ketchup, mustard, relish, and onions, and dug in. I would say that it's probably the best vegetarian hot dog that I've sampled, but so far, that's not saying much. The texture was pretty good- a little thick, but that's okay- and the flavor wasn't vomit-inducing like so many other meatless hot dogs. Definitely not as good as the real deal, but I'm just pumped that a place with veal and reindeer on the menu, would also have a vegan option. Kudos to you Biker Jim!
After hot dogs, frozen yogurt, and some Target binge-shopping, it was time for some jazz in the park. Everyone brought a little something to share- cheese, wine, bread, and fruits, so Michael and I contributed some boozy Arnold Palmers and strawberry shortcakes in a cup. Fun fact: Everything tastes better in a cup.
For the Boozy Palmers, we poured equal parts iced tea and lemonade into a carafe, added vodka, and shook well. As Michael would say, they were delightfully refreshing! For our sweets in a solo cup, we put a layer of angel food cake in the bottom, and topped it with strawberries and whipped cream. It was the perfect, light, summery dessert- and a huge hit!

It was a beautiful night with good music, tasty treats, and great friends. Here's to a wonderful summer weekend, and many more to come. Cheers! :)

tempeh tuna wrap

June? Already? Yikes! With summer kicking into full gear, plans are being made, and time is starting to fly by. Since I last posted, I think I've made maybe 2 or 3 healthy meals at home. Bad Erin. Since I had the Memorial Day holiday off, I finally got the chance to kick back, relax, craft a little, and cook. I've been meaning to try this recipe for quite awhile now, but of course, just couldn't find the time- until today!

The recipe is mock tuna salad, which happens to be printed on the back of the Home-style Organic Five Grain Tempeh from Tofurky. I followed the recipe pretty much to the letter, except I replaced mayo with vegenaise♥, and Old Bay seasoning with Paula Dean's house blend, because of course I had Paula Dean in the cupboard, but no Old Bay. Also, at the very end, I added pickle relish, because what's tuna with no relish?

While the tempeh was simmering and I was mixing sauces, I must say I was seriously skeptical. Soy sauce in tuna? Hell no. The tempeh boiled, I stirred everything together, spread it out onto a whole wheat tortilla, and guess what. It was surprisingly delicious!
The texture is much thicker and chunkier than normal tuna, which isn't a problem, and the flavors are actually pretty dead on considering that there's absolutely no fish in there. I also like the fact that the recipe makes a ton of food, and is very filling. I made a hearty, over-stuffed wrap, and still had a bowl full of tuna for leftovers. This was one recipe I anticipated hating, but ended up really enjoying. Once again, impressed with tempeh! :)

b.l.t. & vegenaise

It's always such a nice treat to go home to my parents' house for a few nights. I get to see the folks, play with the pets, sleep in my old bed, and eat tons of delicious meals from a phenomenally stocked pantry. Mom is a huge Vitamin Cottage shopper, so she always has something new and tasty for me to try out when I come home. For lunch today, Mom whipped out a package of tempeh bacon, and we made some vegan BLTs. Normally, I don't like meatless bacon, but apparently I just haven't tried the right brand, cause this stuff is seriously delicious!

Stuff you need: 1. Bread 2. Vegenaise 3. Tempeh Bacon 4. Lettuce 5. Tomato

Start by heating up a little olive oil in a skillet. When the pan is warm, throw in your tempeh bacon- we found that 2 strips was perfect for each sandwich. While the fakin' bacon is browning, pop your bread into the toaster, and slice up your tomato and lettuce.

When the tempeh strips are slightly browned and warmed through, pull them off the heat and assemble your sandwiches! Take a piece of toast, slather it with Vegenaise, and top it with your bacon, lettuce, and tomato. Boom. Lunch is served.
Okay, it's not rocket science, but honestly, this sandwich blew me away. The bacon's texture is thick with just the right amount of bite, and the taste is like smoked hickory maple goodness. Add a dollop of Vegenaise and some fresh vegetables? That is a damn good sandwich. If you haven't tried tempeh bacon yet, I highly recommend it.

And speaking of amazing products, I can't believe I haven't mentioned Vegenaise before, cause I absolutely love it! It's perfect on sandwiches, in cole slaw, for egg salad, and just about any recipe that calls for mayo. I was never a huge mayo fan in the first place, but Vegenaise is lower in saturated fat than the regular stuff, I love the flavor, and no animals were harmed in the making of it. Sounds like a pretty good combo to me :)
So with my adoration for Vegenaise, and my newfound obsession with tempeh bacon, a BLT was the perfect lunch today. Thanks Mom and Pop! ♥

greek lentil salad

One of my favorite guilty pleasures is magazine buying- Vogue, Elle, Nylon, you name it, and occasionally I'll break down and buy it. I have a hard time justifying purchasing fashion magazines since it feels frivolous, but I have absolutely no problem picking up the newest addition of Vegetarian Times. Fun articles, new ideas, and always great looking recipes. This month they began a 28 day boot camp with daily de-bunked myths and healthy meals, and let me tell you, I jumped on board immediately!

The recipe for day 1 was Greek lentil salad, and it looked so fresh and tasty, I couldn't help but making it right away. They suggest making it for a take away lunch or light dinner, so I made a full batch in preparation for this week's lunches as work. Look how productive I am eating lunch at my desk.

This was my first time ever cooking lentils, and I'm pretty pleased. I love that they're low in sodium and high in protein, which is just what I need more of in my diet. However, I don't think I properly cooked them all the way through, so the salad came out slightly tough. On that note, I wish there was more sauce- more olive oil or lemon juice or something to sop up that dry crunchiness- but then again, maybe that might be solved by properly cooking the lentils? Oops.

It's a pretty good recipe with a great flavor profile. I like it, but I don't love it. When all this rain passes and I'm ready for a fresh, light meal, I'll definitely try this one out again- and next time, I'll properly cook those lentils too! :)
